Caprese


This is my idea of a healthy meal that is classy and delicious. Tomatoes, fresh mozzarella, a dash of oregano, some basil, and a drizzle of EVOO. Unfortunately, it does NOT fill me up these days, not by a long shot. I blame my addiction to carbs.

Just tried this for the first time and I should report to you all: It's good! doesn't taste diet-y, sweet enough, and best of all: packed with big doses of healthiness like Vitamins C, B, E, and folic acid. This is going to be a lunchtime staple.
